LEMON CHICKEN. ( CHINESE COOKING )

LEMON CHICKEN.

I tried this recipe from a recipe book and it turned simply awesome. A must try for all those people who like like spicy food and simple, easy cooking.
It is a Chinese dish and tastes best with steamed rice.

Ingredients are as follows.
For The Marination.
1) Chicken - 500 gms.
2) Egg- 1 beaten. 
3) salt to taste.
4) White pepper powder - 1/2 tsp.
5) Olive oil- 1 tbsp.
6) Maida ( white flour )- 1 tbsp.
7) Cornflour- 3 tbsp.

For The Sauce.
1) lemon- 1 & 1/2 tbsp.
2) Sugar- 2 tbsp.
3) Chicken stock cube- 2 cubes.
4) I heaped tsp cornflour mixed with 2 tbsp water.
5) Olive Oil- 1 tbsp.
6) Onion- 1 medium sized sliced in thick rings.
7) Capsicum- 1 pc sliced thinly.

Procedure-
1)Mix all the ingredients in the marinade with the chicken pieces and let it stand for half an hour or more.
2) Deep fry the chicken pieces in refine oil till golden in colour and tender.
3) In a pan, add the olive oil and sliced onion, stir till onions turns translucent, add the lemon juice and sugar, stir till the sugar dissolves. Add chicken stock cube, 1 cup of water. Bring to boil and add the cornflour paste. ( You can adjust the consistency of the sauce by adding more or less cornflour according to your preference)Turn off the heat and add capsicum.
4) Arrange chicken in a bowl and pour down the prepared sauce over it.
5) Serve immediately with steamed rice and enjoy.
